Chances are it has not been long since you enjoyed
a baked desert or snack which included sodium bicarbonate (baking
soda) in the recipe. It is the primary leavening ingredient
in all baked goods such as cakes, cookies, pies, and biscuits.
Combining baking soda with a leavening agent results in
a simple reaction which promotes rising in bread, cake, and pastry
preparations. While there are many leavening agents, there is
only one primary leavening base and that is baking soda.
